best. granola. ever.

This is actually the tastiest granola in the entire world. I’m being serious. It’s basically just fried salty caramel crunchies. The secret is olive oil, and delicious delicious sugary stuff. I tweaked this recipe a bit to achieve my masterpiece, and i will never make a different granola again.

Ingredients

3 cups rolled oats
1 cup salted, toasted (hulled) pumpkin seeds
1 cup sliced almonds
1 cup unsweetened coconut chips (or finely grated coconut in a pinch, but bigger pieces are better for this)
1 1/4 cup raw walnuts, coarsely chopped
1/4 cup pure maple syrup
1/2 cup extra-virgin olive oil
1/2 cup packed light-brown sugar
1 cup raisins (i used flame raisins because they’re like the poor man’s dried cherry)
Salt

*Truthfully, i already cut the sugar from the original recipe in half here, and you could use even less and it would still be good. But, why? And of course, you can switch out the various sorts of nuts and dried fruit, too.

Directions

1. Preheat oven to 300°.

2. Whisk the oil, syrup, sugar and salt together, then stir in the oats, coconut, and any raw nuts you’re including.

3. Spread the mixture out in a rimmed baking sheet (or cake pan or whateva, just so long as it’s spread rather thinly) and bake for about 45 minutes, stirring ever 15. It’s done when everything is golden brown (don’t let the coconut burn!)

4. Pull the granola out of the oven, and mix in the raisins/dried fruit and any pre-toasted nuts (in my case, the pumpkin seeds). Let cool before storing. Yay!
